Broccoli and Cheese Sliders are baked until the cheese inside is melty and warm and the buttery topping infuses the rolls with flavor. Warm Ham and Cheese Sliders are classic party food. You know the ones. Ham and cheese placed in the middle of Hawaiian Roll sliders, topped with a buttery poppyseed mixture and baked, covered, until the whole thing turns warm, savory and sweet, and absolutely irresistible. This recipe is the classic’s cousin. Tender roasted broccoli makes a completely satisfying filling, adding a little texture and savory flavor.
And the topping? I always go for Everything but the Bagel Seasoning instead of poppyseeds for a little something extra. But follow your heart on this one.

What You’ll Love
This is a recipe that feeds a crowd, is easy to prepare, and works for both vegetarians and non-vegetarians alike. You can even bake two versions side-by-side, one with ham and one with broccoli if you’re serving a mixed crowd. The broccoli version is almost like broccoli cheddar soup in sandwich form and is incredibly comforting and satisfying.
For a warm lunch or light dinner with a simple salad on the side, these are hard to beat.

Ingredients
- Broccoli Florets – You’re going to want to chop the florets pretty small, think bite-sized and then roast them according to my easy roasted broccoli method. If you buy pre-chopped broccoli florets, be sure you pull out any big ones and chop them small.
- Deli-Sliced Cheese – My favorite for these is Colby Jack. It gets really melty for great cheese pulls and has a mild flavor. Any cheddar cheese or Swiss cheese will work just fine too.
- Hawaiian Roll Sliders – Be sure to get slider-sized rolls. Almost any slider rolls will work for these, but the sweet flavor in the Hawaiian rolls goes so well with the savory flavors of the filling and the buttery topping.
- Everything but the Bagel Seasoning – Just putting a plug for this as a topping on the sandwiches! You can find this mix of ingredients that usually serves as the topping of Everything Bagels many places now. Trader Joe’s makes their own variety, but any spice store and many grocery stores will have their own version. Poppyseeds are classic and also work well here.
- Dijon Mustard – This is for the buttery sauce that goes on top of the sandwiches before you bake them. I’ll use any type of Dijon that I have in the fridge, and I often have a variety. One of my favorites is to use a Sweet Hot mustard which has a bit of honey and spice in it, but classic Dijon is a great bet.
- Worcestershire Sauce – Don’t skip this if you can help it. It adds a ton to the savory butter topping.
- Olive Oil, Salt, Butter – Basics that you probably already have.

How to Make Them
- Roast the broccoli – You’re going to want it to be nice and tender. Roast it using my recipe for easy roasted broccoli. Roast broccoli at 425°F until tender which, depending on the size of your florets, should take about 20 to 25 minutes.
- Assemble the sandwiches – Slice open the Hawaiian Rolls (leave the individual rolls connected) and just slice through the center horizontally. Fill the sandwiches with cheese and roasted broccoli. Place them in a baking dish.
- Make the buttery topping – Whisk together melted butter, Worcestershire sauce, and Dijon mustard. This is the ingredient to these irresistible sandwiches. Pour this over the sandwiches.
- Top with seasoning – Add that Everything but the Bagel Seasoning on top (or poppyseeds).
- Bake – Cover the rolls tightly with foil and bake at 350°F for 25 minutes. Then remove the foil and keep baking, uncovered, until golden brown, about 5 minutes more.
- Serve warm!
Is Worcestershire sauce vegetarian?
Typically no. It’s made with fish. So if you need these sandwiches to be vegetarian, be sure to look for vegan Worcestershire sauce (like this one).

Ingredients
- 10 ounces broccoli florets (or 2 small heads of broccoli)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 4 tablespoons butter
- 1 tablespoon Dijon mustard (any kind works; I used sweet hot mustard here)
- 1 teaspoon Worcestershire sauce
- 1 pack Hawaiian roll sliders (16 connected slider rolls)
- 8 slices cheese (Colby Jack or cheddar)
- Few shakes Everything but the Bagel Seasoning (sub poppyseeds)
Instructions
Preheat the oven to 425°F.
Prep the broccoli by chopping it into bite-sized florets. I like these to be fairly small, so even if you're using pre-chopped broccoli, chop any large pieces down a bit.
Spread the broccoli out on a sheet pan, drizzle with the olive oil and salt, and stir to combine. Roast, stirring halfway through cooking, until the broccoli is very tender, 15 to 20 minutes.
Meanwhile, make the topping by melting the butter and whisking in the mustard and the Worcestershire sauce. Set aside.
Set the Hawaiian rolls out on a cutting board and slice horizontally to separate the top from the bottom (don't separate the individual rolls).
Put the bottom portion of the rolls in a square baking dish, cut-side up. Top with 4 slices of cheese, the roasted broccoli, 4 more slices of cheese, and the top of the rolls, pressing down gently.
Drizzle the butter sauce evenly over the top of the rolls. Sprinkle with Everything but the Bagel seasoning. Cover tightly with foil.
Reduce the oven to 350°F and bake the rolls, covered, for 25 minutes.
Remove the foil and continue baking, uncovered, until the top of the rolls are golden brown, about 5 minutes more.
